Eating Right

It's time I stepped up my game and started eating better. Pinterest is such a great source for healthy recipes...like these spinach burgers which I have been dying to make.

My favorite foods are pizza and ice cream (such a child) with salad coming in third. I try to eat one salad a day. This garden picnic video by the the author of "Salad for Dinner" definitely puts me in the mood for salad.

The blog Eat and {Relish} is true eating inspiration and makes me want to move to Boulder and learn to cook.

A few items I need to add to my kitchen...

Strawberry Huller

Herb Scissors

Do you have any healthy eating tips? I realize my first tip is to stay far away from JCW in order to avoid any death fry enabling.

  4. I have that strawberry huller and I love it! I've been dying to get the Salad for Dinner cookbook. We're big on "green" smoothies for breakfast as a way to get lots of fruits and veggies. I put a big handful of greens {spinach, kale, whatever is on hand} in the blender. Then a banana, half of an avocado, and whatever fruit we have in the freezer {mango, pineapple, and a little basil is our fave combo}. Whir it all up and then add some water until it's the right consistency. So yummy and easy and healthy!

  5. I hope you get lots of good tips that I can use...I am going to come back from Italy needing to check myself into a fat farm...and right before Memorial Day!!
P.S. Do they still have fat farms?? It is sounding like a good idea...picturing upstate NY, farm to table, hikes...

  7. You know I LOVE this post! I want Salad for Dinner too. You need to check out this blog and make the quinoa chicken parmesan ASAP. My hubby loved it and already asked for it again! http://www.preventionrd.com/2012/05/money-matters-baked-quinoa-and-chicken-parmesan/

  8. A good quality salad spinner is a valuable piece of equipment. Buy a really good one and it will really improve the salads you make at home...crisp cold lettuce that gets dry..allowing the dressing to adhere nicely...so you can use less.

  9. I have recently started to use the MyFitnessPal app. It has been a real eye opening experience. It's nice for people who cook at home a lot because you can plug in your recipes and it will give you a breakdown on nutrition in the same format of nutrition labels. After I made a 450 calorie margarita, I just about died. Lol!

It also gives you a daily/weekly breakdown in nutrition label format of what you have consumed.

  10. Put your salad and dressing in a container and shake, rather than pour the dressing on. The salad gets a lovely jacket of dressing and you use a LOT less.

  11. It is so easy to enjoy salads this time of year, so refreshing! My favorite salad dressing is also fairly healthy - is nothing more than 3 parts olive oil to 1 part balsamic vinegar and pepper to taste. I also find that using different types of greens for the base of the salad keeps the flavors different so I do not grow tired of them!

  14. I was so amazed when I saw the strawberry huller at a bridal shower last year. So many gadgets I need to eventually get!

Trying so hard to stay away from anything fried lately... difficult.
