Clover Club

Ingredients:
2 ounces gin
1/4 ounce grenadine (substitute with simple syrup and raspberries)
3/4 ounce fresh lemon juice
1 egg white

Combine ingredients ans shake vigorously with ice for about 30 seconds; then strain into a glass.

We went to a Speakeasy themed event this weekend and it was the first time I had ever seen cocktails made with egg whites. The egg whites made the drinks frothy and gave them a rich texture...this is something I could get use to. Using simple syrup and fresh raspberries for the Clover Club is a must.

You can purchase pasteurized egg whites.
